Boondi Ladoo

    For Boondi Batter
  • 2 teaspoons Gram flour
  • ½ teaspoons Yellow food color powder
  • Ghee for deep-frying
  • For Sugar Syrup
  • 500 grams Sugar
  • Water as required
  • 2-3 quarts Green cardamom pods, crushed
  • 2 quarts Black pepper corns
  • Saffron strands
  • 1 teaspoon lemon juice
  • Other Ingredients
  • ½ teaspoons Castor sugar
  • Silver varq, for garnish
    For Boondi
  1. To prepare boondi, add gram flour and yellow food color to a bowl, mix well.
  2. Add some water and prepare a thick lump-free batter.
  3. Using a perforated spoon drop in small rounds of batter into the hot ghee, deep-fry till they turn golden.
  4. Remove and transfer to the prepared sugar syrup.
  5. For Sugar Syrup
  6. Add an equal amount of sugar and water in a deep-bottomed heavy pan.
  7. Allow the sugar to melt completely, add in crushed green cardamom pods, black peppercorns and saffron.
  8. Allow to cook until it begins to thicken to a 1 string consistency.
  9. Add lemon juice to clean any dirt in the sugar, if the scum comes up then remove it using a perforated spoon.
  10. Remove from flame and set aside to cool to room temperature.
  11. For Ladoo
  12. Remove the soaked boondi from the sugar syrup into a thali.
  13. Mash the boondi a little with your palms, add some castor sugar, mix well.
  14. Start shaping into ladoos.
  15. Once prepared, garnish with silver varq and serve.
